Ingredients

2 cups (100g) dried Zobo leaves (dried hibiscus flowers)
2-inch piece fresh ginger, sliced
1 ripe pineapple, peeled and chopped (or 1 can pineapple chunks with juice)
1 orange, sliced (optional)
10 cups water
1 cup sugar (adjust to taste)
2-3 cinnamon sticks (optional)
5-6 cloves (optional)
3-4 cardamom pods, crushed (optional)
½ teaspoon vanilla extract (optional)
Fresh mint leaves for garnish
Ice cubes for serving
Lemon or lime slices for garnish

Instructions

Rinse the dried Zobo leaves (hibiscus) thoroughly under cold running water to remove any dust or debris.

In a large pot, bring 10 cups of water to a boil.

Add the rinsed Zobo leaves, sliced ginger, cinnamon sticks, cloves, and cardamom pods (if using) to the boiling water.

Cover the pot, reduce heat to medium-low, and simmer for about 15-20 minutes until the water turns a deep red color and the flavors have infused.

Add the chopped pineapple (or canned pineapple with juice) and orange slices if using. Continue to simmer for an additional 5 minutes.

Remove from heat and stir in the sugar until completely dissolved. Add vanilla extract if using.

Allow the mixture to cool completely, then strain through a fine-mesh sieve or cheesecloth into a large pitcher, pressing down on the solids to extract all the liquid.
