Rinse the dried Zobo leaves (hibiscus) thoroughly under cold running water to remove any dust or debris.
In a large pot, bring 10 cups of water to a boil.
Add the rinsed Zobo leaves, sliced ginger, cinnamon sticks, cloves, and cardamom pods (if using) to the boiling water.
Cover the pot, reduce heat to medium-low, and simmer for about 15-20 minutes until the water turns a deep red color and the flavors have infused.
Add the chopped pineapple (or canned pineapple with juice) and orange slices if using. Continue to simmer for an additional 5 minutes.
Remove from heat and stir in the sugar until completely dissolved. Add vanilla extract if using.
Allow the mixture to cool completely, then strain through a fine-mesh sieve or cheesecloth into a large pitcher, pressing down on the solids to extract all the liquid.
Taste and adjust sweetness if necessary by adding more sugar or a little honey.
Refrigerate for at least 2-3 hours until chilled, or overnight for the best flavor.
Serve cold over ice, garnished with fresh mint leaves and lemon or lime slices.
