Traditionally made with beef, but also delicious with chicken or lamb, suya is characterized by its distinctive spice rub called "yaji" or suya spice. This aromatic, slightly spicy blend contains ground peanuts and various spices. Our recipe brings this West African classic to your home grill, perfect for entertaining or a special family dinner.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
Slice the beef into thin, flat pieces, about 1/4 inch thick and 1-2 inches wide. The thinner the slices, the more tender and quicker they'll cook.
In a large bowl, combine the AfriMart Depot Suya Spice blend, vegetable oil, paprika (if using), salt, and black pepper. Mix well to form a paste.
Add the sliced beef to the spice mixture and toss until all pieces are well coated. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
Preheat your grill to medium-high heat (or you can use a grill pan on the stove).
Thread the marinated beef slices onto the skewers, folding the meat back and forth if necessary, but don't overcrowd.
Grill the skewers for about 3-4 minutes per side, or until the meat is cooked through and has nice grill marks. Be careful not to overcook as the thin slices can dry out quickly.
While the meat is grilling, prepare a plate with the sliced onions, tomatoes, cucumber, bell peppers, and cabbage if using.
Once done, remove the skewers from the grill and sprinkle with a little extra suya spice if desired.
Serve the hot suya skewers on the prepared vegetable plate, along with sliced chili peppers for those who enjoy extra heat, and lemon or lime wedges for squeezing over the meat.
Traditionally, suya is wrapped in newspaper or foil and eaten directly off the skewers with the raw vegetable garnishes.
